Gluten free? Check! Low carb? Check! Crunchy, zippy, and satisfying? YES!
The wraps are made out of two ingredients: cottage cheese and eggs! You can add any seasonings that make you happy to jazz it up too. Then fill the wraps with your favorite things. I choose to make this vegetarian. I’ve been making these wraps for over 25 years. I found the recipe from a cookbook I bought from Pier 1. Remember that store? Yeah, the store may not be around any longer but this recipe lives on. I would make it any time I was really hungry and wanted to slim down and feel great.
Gluten Free Cottage Cheese Wraps
Wraps
1 cup cottage cheese
2 eggs
1/2 tsp salt
1/2 tsp pepper
1/2 tsp garlic powder
1/2 tsp onion powder
1 tsp. chili crisp (optional – I LIKE IT HOT!!!)
- Preheat oven to 350 degrees.
- Blend all ingredients together in a food processor or Vitamix.
- Pour mixture onto parchment paper lined baking sheet.
- Bake 35 – 40 minutes until wrap begins to brown on the edges.
- Allow to cool, then cut in half to make 2 wraps.
Veggie Salsa Filling for Wraps
1 red bell pepper
1 yellow bell pepper
1 green bell pepper
1 cup diced radish
1 carrot diced (same size as other veggies)
2 lemons
2 tbsp. olive oil
1 tsp onion powder
1 tsp garlic powder
1 tsp. crushed red pepper (optional)
salt and pepper to taste
1 cup grape tomatoes cut in half
1/2 cup fresh basil cut into strips
1 romaine lettuce leaf
3 tbsp. cottage cheese
- Chop all veggies and add to large bowl.
- Add lemon, olive oil, spices, salt and pepper to taste. Add basil at the end and mix together.
- Lay out wrap and place a large romaine lettuce leaf to hold all of the filling.
- Start by layering cottage cheese to the lettuce. Then add the veggie salsa and tomatoes. *TIP: I do not add the tomatoes to the veggie salsa as they will break down in the fridge and make your salsa watery. Keep them separate.
- Roll up the wrap and enjoy!
You can add anything you want to this. Something I might do is add canned tuna, but you could add chicken or any lean deli meat. Although, I try to stay away from deli meat because of the processed nature of it and it’s over the top salt content.
